Raspberry Oatmeal Bars

This recipe for raspberry oatmeal bars comes from the talents of my mother, Jean Lamothe.  Most summers, we would take a trip to Camden, Maine.  It is one of the  most relaxing and picturesque places to be. My husband and I absolutely LOVE Camden Deli.  It’s a great place to grab one of their out of this world signature sandwiches or for us, a cup of gourmet coffee and a dessert after the sun sets. We love their raspberry oatmeal bars- so much in fact that we grabbed about 6 for the trip home. My Dad was enjoying the trip home.  We stopped at a rest stop for dinner and he insisted he wasn’t hungry.  Weird, since hadn’t eaten since breakfast. Turns out he ate the entire bag of raspberry bars! So, needless to say, my mom was quickly in the kitchen whipping up a batch to keep everyone happy.raspberry oatmeal bars

  • This tasty oatmeal bar layered with sweet raspberry preserves will become one of your favorites. Cut into bars and pack for a picnic lunch.

Instructions

  1. Preheat the oven to 350 degrees. Grease a 9x13 inch pan with vegetable shortening. In a large mixing bowl, cream together the butter and brown sugar until smooth. Combine the oats, flour, salt and baking powder. Stir the dry ingredients into the creamed mixture.
  2. Press half of the oat mixture into the bottom of the prepared pan. Spread the preserves over the crust. Crumble the remaining oat mixture over the raspberry layer. Bake for about 45-50 minutes or until lightly golden brown. Cool completely before cutting into bars.
